Cod Piccata
serves 4
Ingredients
- 1 lb cod or other white fish
- 1/3 C flour
- 3/4 C chicken stock
- 1/4 C dry white wine
- 3 T lemon juice
- 1/4 C capers
- 2 T parsley, chopped
Instructions
- Season the fish, then dredge in the flour. Brown the fish in oil and butter, then plate.
- Reduce the chicken stock and wine, add the lemon juice and capers, then dress the fish with the sauce.
- Garnish with the parsley and serve hot.
